Once upon a time, I went to my friend Julie’s house for some kind of party/gathering. Julie is the hostess I aspire to be. But, who am I kidding? I will never have the OCD needed to host a party the way she does. She’s a pro. From the menu to the decorations to the favor you take home, she’s the best. And this was before Pinterest was a thing, so you know she’s the real thing.
Anyhow, she made a meal that I never forgot and was soon serving at my own less fancy gatherings.
Crockpot Taco Soup.
First, you brown the ground beef along with chopped onion.
Drain and pour it all into your friend, the crockpot.
Add the rest of the ingredients.
Give it all a good stir. And then, you just set the slowcooker to High for 4 hours or on Low for 8-10 hours, and it’s ready!
Serve it in your favorite bowls or shoot, grab any bowl. Top with shredded cheese, a dollop of sour cream., some chives (if you remember; in this instance, I forgot). Add some corn chips to garnish. And enjoy!
