Cooking With Lex – Crockpot Taco Soup

Once upon a time, I went to my friend Julie’s house for some kind of party/gathering. Julie is the hostess I aspire to be. But, who am I kidding? I will never have the OCD needed to host a party the way she does. She’s a pro. From the menu to the decorations to the favor you take home, she’s the best. And this was before Pinterest was a thing, so you know she’s the real thing.

Anyhow, she made a meal that I never forgot and was soon serving at my own less fancy gatherings.

Delicious Taco Soup


First, you brown the ground beef along with chopped onion.

Drain and pour it all into your friend, the crockpot.

Add the rest of the ingredients.


Seriously, this is so easy.

Give it all a good stir. And then, you just set the slowcooker to High for 4 hours or on Low for 8-10 hours, and it’s ready!

Serve it in your favorite bowls or shoot, grab any bowl. Top with shredded cheese, a dollop of sour cream., some chives (if you remember; in this instance, I forgot). Add some corn chips to garnish. And enjoy!

I’ve seen this recipe all over the place in different variations. Julie said she first got it from Paula Deen.

Here are the ingredients I use:

  • 1 lb lean ground beef, browned and drained.
  • 1 chopped onion, cooked with the ground beef until translucent
  • 2 cans pinto beans
  • 2 cans Kidney beans (rinsed)
  • 2 cans corn (and juice)
  • 2 cans of diced tomatoes with green chiles
  • 2 cans of diced tomatoes
  • 1 package taco seasoning
  • 1 package ranch dressing mix
  • Shredded cheese, sour cream, and corn chips.
  • (chives, fresh jalapeños, olives are all good optional garnishes)

Let me know if you try it. It’s a favorite around here. Plus, it feeds about 8-10 people, so thumbs up for that.
